Our 'Caps' mushroom jerky is so so very good!  Our good friend and local real estate guru Kathleen came up with a recipe that explodes with rich umami flavour coupled with crisp fresh asparagus.  Did you know Umami means “delicious savory taste” in Japanese, and its taste is often described as the meaty, savory deliciousness that deepens flavor.  Prep time 5 minutes Cook time 10 minutes Total time 15 minutes Serves 4

Ingredients

Caps Mushroom Jerky 1 bag (50g)

Shiitake mushrooms 200 g (one portion at market)

Asparagus bunch (roots trimmed)

Tagliatelle pasta 200 g (uncooked weight)

Vegetable stock (liquid) 250 ml

White wine 100

Olive oil 2 Tbsp

Jerky Pasta

Prep:

Cook pasta as usual    - be sure to save the pasta water after
cookingChop shiitakes into slicesCut asparagus into bite size pieces


Cooking:


In a large frying pan, heat olive oil and add shiitakes and
jerky.Cook for 2 minutes on high and add asparagus and white
wine.  Continue to stir for 1 minute then add stock and 100 ml
pasta water.Toss in pasta and use tongs to blend together for another
minute.

Garnish with our microgreens
